Apricot Cake

A    
200g   flour
2 3/4 tsp   baking powder
   
1 cup   NESTLÉ® CORN FLAKES finely blended
180g   unsalted butter
6 tbsp   ground almond
150g   brown sugar

3 beaten eggs
2 tsp vanilla essence
150ml NESTLÉ® UHT Low Fat Milk
100g dried apricot, chopped

 
Cooking Steps
1 Sift together ingredients A; add in NESTLÉ® CORN FLAKES and mix well. Mix butter into flour mixture until it resembles fine breadcrumbs.
2 Add in ground almonds & sugar; mix well.

Stir in ingredients B and stir slowly to mix. Lastly add chopped apricots.

Pour mixture into lightly greased greased and lined baking pan (25cm). Bake in preheated oven for 180℃ for 35 to 45 minutes. Test with cake tester.

The Malaysian Dietary Guidelines recommends a daily intake of 20g to 30g of fibre for adults.
 
Good to Remember
Apricot is good source of dietary fibre. Taking sufficient fibre helps proper bowel function and reduces symptoms of constipation.
