Soya Steamed Fish

What You Need

A  
100 ml water
1 tablespoon cooking oil
1½ tablespoons MAGGI Oyster Sauce
2 teaspoons MAGGI Ikan Bilis Stock
   
Granules  
2 teaspoons dark soya sauce
2 teaspoons sugar or to taste
1 teaspoon pepper or to taste
500 gm whole fish, cleaned & scored
  both sides
   
B  
100 gm chopped onion
100 gm black beans, soaked in 1 tablespoon hot
  water & mashed
100 gm chopped green capsicum
100 gm chopped red capsicum
100 gm chopped yellow capsicum
   
1 stalk Chinese celery, sliced
1 stalk spring onion, sliced

Make It

Mix ingredients A in a bowl, stir to a smooth batter and leave to settle for 15 minutes. Spray pan evenly with oil and heat. Add enough batter for 1 crepe and spread in a circular motion till even.
Cook over low heat until the edges start to curl upwards then remove from pan. Repeat until all batter is used. Meanwhile, in a saucepan, mix all sauce ingredients. Cook over low heat. Stir continuously until sauce slightly thickens.
  1. Mix ingredients A well.
  2. Rub mixture all over fish.
  3. Pour ingredients B over the fish and steam for 10-15 minutes.
  4. Remove from steamer and sprinkle with sliced celery and spring onion.
