Pan-Grilled Honey Chicken Tortilla Wraps

Ingredients:

200g boneless skinless chicken breast
1 tablespoon olive oil
4 pieces wholemeal large tortilla wraps
100g lettuce leaves
1 (medium) tomato, de-seeded and cut into small cubes
30g pea sprouts
100g avocado, cut into long pieces (optional)
Shredded cheese to sprinkle (optional)

Ingredients A (For marinade):

1 tablespoon honey
1 tablespoon lemon juice
¼ teaspoon ground black pepper
¼ teaspoon salt

Ingredients B (For dressing):

4 tablespoons low-fat plain yogurt
¼ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons low-fat mayonnaise

Method:

  1. Marinate chicken with ingredients A for about 1-2 hours (or overnight) in the refrigerator.
  2. Heat olive oil in a medium non-stick pan on medium heat. Cook chicken on each side for about 10 minutes until thoroughly cooked. Remove from pan and leave to cool for 10 minutes. Cut into long strips.
  3. Mix ingredients B well to make the dressing. Spread 1 tablespoon of dressing on a tortilla and place lettuce then chicken, tomato, pea sprouts, avocado and shredded cheese, if desired. Fold in 3 sides of the tortilla and wrap it up neatly. Fasten the wrap with a toothpick.
  4. Grill the wrap on a grill pan before serving if desired.
