Hot Casserole Sandwich

Multigrain Porridge with Minced Chicken and Vegetables

Ingredients:

300g Mushrooms
50g Onion
20g Garlic
Salt, Pepper, Mixed Herbs
100g Mozzarella cheese
50g Ketchup
2 tbsp Butter for frying
30g Chives
90g Cherry tomatoes
1 pcs Baguette 160g

Method:

  1. In a skillet, sauté finely chopped onions and garlic in a knob of butter until they turn fragrant and golden.
  2. Peel and grate the mushrooms using a larger slot. Add the grated mushrooms to the pan with the onions and garlic. Season to taste and cook until any released moisture has evaporated.
  3. Preheat your oven to 200 degrees celsius.
  4. Cut the baguettes in half, and brush them with a layer of ketchup and arrange the mushrooms on the baguette halves.
  5. Place the prepared baguettes on a baking tray lined with baking paper.
  6. Pour the casserole mixture over the baguettes, and top with grated cheese and halved cherry tomatoes.
  7. Bake in the preheated oven for 5 to 7 minutes, until the cheese has melted and turned beautifully golden.
  8. To serve, drizzle a little more ketchup over the top and garnish with a sprinkle of freshly chopped chives.
